Curried Chickpeas n' Onions
15 oz. can chickpeas (garbanzos), drained & rinsed
1 medium yellow or Vidalia onion, chopped
8 oz. can no-salt added tomato sauce
1 tbsp. curry powder (style of your choice)
1 tbsp. Pirate's Blend Caribbean Condiment (or to taste)
1 tsp. Iguana Red Cayenne Pepper Sauce (or to taste)
Fast way: in a medium non-metallic mixing bowl combine all ingredients. Microwave
on high, covered for 7 minutes, or until onions are soft and translucent.
Slow & Tastier Way: Saute onions in medium sauce pan on med-high in 1 tsp. olive oil,
until just starting to soften (barely a minute). Add everything but tomato sauce and stir
near-constantly for another minute or so. Stir in tomato sauce until it's heated thoroughly
