Ingredients: Vinegar, Bhut Jolokia Chilies, Sugar, Salt, Granulated Garlic, Lemon Extract, Xanthan Gum 

Appearance: Thin conistency, red with slight brown color 

Aroma: A pleasant blend of vinegar and pepper, with a slight garlic background

Taste: While the vinegar is at the very front of this sauce, it blends nicely with the peppers. Garlic is kept to the back, while the lemon extract is very noticeable. The salt is also quite noticeable, although the nutrition information shows only 35mg per tsp. Although a well rounded sauce, we expected far more heat from a sauce with "Jolokia" in the name.

Heat: Hot (8).

Conclusion/General Comments: CaJohn's Holy Jolokia Sauce is a well balanced hot sauce that will accompany most any food, and would also lend itself very well to cooking. But, being a Jolokia sauce, we felt that it came up short. As a hot sauce it is excellent, but do not expect Jolokia type of heat, and for this reason we have to knock off a couple of flavor points.
